I have done it and will continue to do it.  It works just like you would expect and makes cleaning up any spills super easy.  Spills bead on top instead of sinking in and make wiping up easy.  I always have a couple of napkins in the glove box for this purpose.  Not that I'am messy, but just in case.  You do have to reapply every so often.  I probably don't do mine like I should, and reapply about once a year on the fabric.

I scotch guard my seats 3 times a year. I haven't decided if it is necessary or not as I've only had my current car for 2 years and before that I had leather.

 

I should note that I do not have any pets, but I do have a daughter who adds a bit of wear and tear. So far the seats are looking great.

 

In my mind, regular vacuuming is more important than scotch guard, but I would still say go for it since the price is low and application is very easy.
